We're here at the big, huge, fair to celebrate the begining of fall.

Here in the truck, we are all in awe of the spot we picked out to set up.

I don't think any of us ever saw pigs race before.

I don't think we thought pigs could race.

Let's do this!

We made a fresh batch of HdP.
Also, frying peppers, red hot chili peppers, garlic,
red onion Balsamic Vinegar, and an heirloom purple tomato. Friendly reminder, remove all the seeds and inside gunk from the hot peppers or your head will explode later; not a pretty thought.

Tofu sausage (this is a lie). We got a little squeamish about this being next to the pig racing event.

Brown up the sausage in a separate fry pan with a splash of EVOO.

Toss a major glob of Plugra (preferred by leading chefs) into another pan.

Saute onions and garlic first. Then all the veggies except for the tomato.

Where everything is rocking, add some white wine and let it cook off.

Then finally the tomato chucks and the Vinagah.

Put the whole 9 yards in the oven at 350 for about 20-30 minutes in an oven safe implement.

Toss the fresh pasta into boiling water. We use Angle Hair; 3 minutes is enough.

Plate the pasta,then top with the veggie sauce.

PR cheese please. Some Pinot would groovy.
