Mississippi Risotto

Hey Truckies!

We're bloggin live from beautiful Lebanon, Mississippi at the site of the

legendary  Route 66 "Munger Moss Motel."

It's krazy exciting here because in addition to a special new D's Diner Food Truck offering, we are absolutely thrilled to be joined by Train front man Pat Monahan and Jimmy Stafford.

The band is promoting their line of amazing wines and is hooking up with us here at the 3M to do a few acoustic sets while the folks dine and enjoy their music.

OK Truckies, let's do this !!!

Get the country ham frying in a separate pan.

Grab some chicky stock or make your own. We brewed a whole onion and some springs of Rosemary.

EVOO, crushed red pepper, and chopped onions. Saute. Then 3/4 handfuls of Arborio rice.

Truckies, listen up now. You gotta go slow,keep stirring, and be patient. You want a creamy, soft texture.

Keep adding stock as needed.

Then add the goods:

Lima Beans

Corn

Country Ham (can't find it, go to Cracker Barrel)

Fresh Basic and thyme

Remove from the heat and cover for a few.

Plate and coat with  PR cheese, please.
