Trinity at the Odeon

Hey Truckies...

We're heading home. But we decided to do one more Route 66 gig.

So, we're live bloggin from Tucumcari,

New Mexico at the Odeon Theater.

We were thinking about what we felt was a good symbol of Route 66 and the classic 1971 film "The Last Picture Show" came to mind.

One more time!

Saute the "Trinity" in EVOO to create a Cajun Roux.

Chopped onions, peppers, celery.

After a few, add chopped garlic, tomatoes; and some Bay Leaves, Worcestershire sauce and some Red Pepper; depending on how hot you want things.

Add 3/4 cup of rice and 3 cups of Chicky Stock.

Give it about 15 minutes or so.

Meanwhile, take some chopped chicky and shrimp and mix in a bowl with Creole/Cajun seasons.

Chop up some Andouille sausage.

When the rice is nice, add the meat for about 10-15 or so. Add more chicky stock as needed.
