Hey Truckies!

We're back! And we have a special D's Diner Food Truck adventure; retracing the route of Ari's 2009 epic art journey.

We parked the food truck in front of the famous Red Shoe Inn, Mabou, Cape Breton Island.
Orangedale Whistle Chili

Let's do this!

Soak some Jacob's Cattle Beans over night.

They look like little cows :)

In the morning, drain the water, add  new water and slow boil for 30-69 minutes.
Ari's art show in 2009 at the Mabou Fire Hall, Saturday August 8th.
Get a Dutch Oven ready to rock.

Take some Steak Tips and chop into one inch pieces. Brown in skillet.

While that's going on, saute the Trinity in the Dutch Oven:

Chopped onions, green bell peppers, and celery.

Add some chopped garlic.





Add the beans and steak tips.



Grab a can of Hunt's Premium Pasta Sauce and pour half into the brew.

Set the Dutch Oven to simmer between the low and warm settings.

Toss in some nice wine if you like.



Now for the spices.

1 Bay Leaf
Alive, Basil, Rosemary,and Thyme
Some Smoked Paprika.
A good amount of Chili Powder.
A quarter as much Cumin.


Add more water until you have the consistency you prefer.

Slow cook the Chili on low for 6-8 hours; the longer the better.

Reserve the "hots" for later in the process. Add according to taste.

What to expect...

This is not "in your face" Chili.

Many layers and subtle surprises.

A Pinot Noir works better than a beer in this case.
