We're here in the picturesque village of Victoria-by-the-Sea, Prince Edward Island.

We parked the food truck at the lighthouse to be close to where Ari had his 2009 art gig.
Let's do this...

Red Island La Vie Douce Onion Soup

Cut up some slices of good bread to be somewhat smaller than the soup bowl.

Toast the bread, rub fresh garlic on it and set aside for the moment.

Slice up 5 or 6 onions. More is less; as you will see.


In a Dutch Oven, over medium/medium high heat, put a 2 tablespoon glob of Plugra (Preferred by heading chefs).

Add a splash of EVOO to keep things honest and upright.

Add the onions and stir from time to time. Depending on your burner you are looking at a half hour commitment.
Add a dash of salt.

When golden brown, add a tablespoon of flour and stir for a minute.

To de-glaze, pour a cup of dry white wine. Always cook with the wines you drink; nothing less!

Now add 4 cups of stock; your choice. Beef is more robust.

Make up a herb sachet of a Bay Leaf, some Rosemary, and Thyme.

Add to your soup.

Allow the soup to cook at a simmer for 15-30 minutes.


Put the soup in an oven safe bowl.

Then add a slice of your garlic toast.

And then a ton of your fav cheese on top. We used Old Croc.

Into the oven on "broil" and keep a close eye on the progress; just a couple minutes.

If you go to a restaurant and there are TV screens in the establishment, do a 180 and walk out!

Who needs this garbage in a moment that should be intimate, profound, and special?

This meal is nothing like you will find in a restaurant.

It is aromatic and brimming with flavor that can not be experienced in an assembly line.

This is an opportunity to savor the love of a companion, and the invention of of a dinner built upon a labor of love !
